I have to share this new recipe that I found the kids LOVE, LOVE, LOVE. I hope you enjoy it, too.
Corn Dog Muffins
1 c. flour
1 c. cornmeal (yellow)
3 Tbs. sugar
1 Tbs. baking powder
1/2 tsp. salt
2 beaten eggs
1 c. milk
1/4 c. oil
1 c. shredded cheese
1 pkg (8 count) hotdogs, cubed
Mix dry ingredients. Beat eggs and mix with milk and oil. Pour into dry ingredients and stir until combined. Add the cheese and hotdogs. Stir well. Pour into greased muffin tins (you can use paper liners, but the corn bread sticks to them, so I suggest just greasing them instead). Bake at 425 degrees for about 10 minutes (times will vary based on your oven). Makes about 20 muffins.
The kids love to dip them in Ketchup (mustard, too, for Kyler). Just a little heathier than your ordinary corndog!

It is great to catch up on the events of your family. Sounds like a a fun family trip. You snd Grant handle your family so well. I am impressed with how much time you were abe to shop. Good girl!!
I was doing real well with the recipe until it got the the 'H' word. blah!
